Strawberry Lemonade Zucchini Bundt with Lemon Glaze


I don't normally like leon desserts, let alone desserts in general, but one of my co-workers brought fresh picked lemons from her tree. I have been having an itch to bake lately, so I quickly grabbed a few lemons and looked for a good recipe.

Unlike cooking, baking is not something you can alter to much. But of course I did anyway. The original recipe was Zucchini Lemon Bundt with Lemon Glaze. I slightly altered it by adding a little Pure Vanilla extract to the bundt and the sweetened strawberries to cut the tartness and citrus of the lemon. Surprisingly this dessert was not too sweet and not overpoweringly lemon-ey. It was an overall success.

Pork Chops and Appleslaaaaw

So, over the 4th of July weekend I went up north to San Jose to visit my Dad. I also started my sleeve while I was up there, but you will have to wait for that post....

Anyway, my Dad was making pork tenderloin and I remembered this meal I made back in May. It is a seared pork tenderloin with a mojo jalapeno relish sauce, roasted diced potatoes and an apple coleslaw. The apple coleslaw I made used a recipe I whipped up on the fly thinking it would be great with the pork. Later I looked up apple coleslaw recipes, and none were like mine. I was happy to have an original recipe.

On the 4th when I was making it in the kitchen my Dad was very unsure about the apples in the slaw and kept coming in making comments about the apples. "Oh, so the pieces are too small for me to pick out."...."Dad, just trust me, it's great." Boy did he eat his words. Literally. We had a great 4th of July weekend, and I think maybe I drank too much one night, but it happens. Love you, Dad.
